Fluffy Egg bhurji

Ingredients:
1 Tomato
4 eggs
3 slices Salami
Coriander powder
Garam Masala
Ginger Garlic paste
Red chilli sauce
Green chilli sauce
Salt & pepper
Butter

Method:
*Begin with a sauce pan or Kadai on high heat
*Add in butter as per your preference (I'm adding only 1tsp)
*Add finely chopped tomatoes and mix them well till it starts releasing it's water
*Finely chop 3 slices of Chicken Salami (or any salami will do) & add to the mix
*Mix well and add in your green chilli sauce, red chilli sauce (half tsp each)
*Add just a little Garam Masala & corriander powder
*Mix well till the flavours are blended.
*Add 3/4 glass of water and cook till water is slightly reduced
*Then add your eggs, keep the flame a little above medium & cover it up for a minute.
*Lower the heat & take your vessel out of gas
*Mix your eggs well to make a soft bhurji for 30seconds.
*Put it back on gas on high flame for 30seconds
*Take it off gas again and start mixing the dish or folding the dish
*Add 2tsp of butter at this stage (this process of removing off heat and putting it back on heat will keep the eggs from over cooking)
NOTE: Above technique was adapted from chef Gordon Ramsay's internet tutorials
*at this stage when you're putting the vessel back on gas add your chopped or grated cheese and heat up for another 30seconds
*Season it with salt and pepper.
* Turn off the gas and cover it up with a lid (steam from the dish itself will slowly melt the cheese)
*I love garnishing with Parsley; but you can try corriander leaves as well or any green leaf herb you like
.
Serve it up with any bread or roti.
